I have 2 sets of carbs for this motor. One set work well at speeds but idles erratic. The other set idles perfect but starves for gas at acceleration. but works holding the key in/choked.. Both sets have been cleaned over and over. I just don't know what to do any more. any suggestions would be greatly appreciated.

When you hold the key in the fuel primer valve opens.----Fuel is sprayed into the engine.----This fuel bypasses the carburetors !-----This tells me that there is an issue with those carburetors.---------Did you remove the brass high speed jet that SCREWS horizontally into the bottom of the carburetor bowls, yes or no.------Those jets need to be clean.
