92 Sea Swirl with Ford 302 5.0 engine stalling on hard acceleration.

Hi good folks of the boating community,

We purchased the boat several weeks ago and during the test drive on the lake, it stalled several times. It obviously needed some work and being a Ford enthusiast and rebuilding many motors I didn't sense this would be much to tackle, yet here I am. Its starts easy and idles smooth, and doesn't stall consistently. Only sometimes. Here's what I've done thus far to remedy the issue.

1. Rebuilt the Holley 2300 2BBL Carb (soaked in chemtool and compressed air ALL orifices)
2. New HEI destributor with coil
3. New 8.5mm Wire Set
4. New plugs (gaped at .035)
5. Flushed fuel line and new fuel filter
6. Oil change
7. Set timing with light at 10 degrees BTDC

Manually accelerating the carb quickly with throttle linkage removed, it sounds like the engine is gasping for air like a vacuum leak. The accelerator pump is squirting a nice consistent stream into both barrels.

I'm a little stumped. Gonna change the PCV next...
