What is the average water pressure on my Force Outboard ? I believe the port is just to the right of the thermostat with a 1/8 plug.

Actual pressure is not really important as volume. The pressure will change with engine rpms and thermostat position. If you lose pressure put in a new impeller and possible impeller housing. Has the motor been flushed after each use?
