Wondering if anyone can estimate what a cruise burn would be on these engines on a Carver 41 foot motor yacht dry weight 26000 pounds I have also read above 40' and above 20,000 lbs diesels are better way to go curious to hear about that too.

Using the tool at boat-fuel-economy.com the engines (twin together) would burn 25 GPH at 3000 rpms and a whopping 66 GPH at 4600 rpm Does this sound about right

Unfortunately, yes. That's why you see so many boats that size creeping along off plane, at 5 or 6 knots. Any more speed than that--like hanging almost on plane--and the fuel burn goes sky high.

without know the gear ratio and the prop size, estimating the fuel burn is going to suffer accuracy....that said, it's going to be significant as Jeff described.

Your comments about the diesel's are good rules of thumb - more wet area of the hull = more resistance = more torque to move it. A lot will depend upon your usage; if its 'typical', its likely to be cost prohibitive to swap out on what you have... Pascoe's articles will go thru the details...
