engien removal from 1972 commander salon

Hello, I have a 1972 Chris Craft Commander Salon. It has the Ford 427 Side Oiler engines, the only problem is that the engines are shot and need to be rebuilt. I own an auto repair/machine shop so I have no issues rebuilding the engines. The only thing im thinking about is how the heck do I get the short or long blocks out of the boat??? The engines are located in the middle of the boat and are easily accessed by removing the flooring of the main deck. My salon has a cover/top over the main deck.. see link: http://commanderclub.com/page/35-salon. Any ideas of how to get the engines and transmission out of the boat?

Ayuh,... Ya break 'em down to the smallest pieces possible, 'n Muscle 'em out,...
 
Saw a small block chevy come up through a hatch.-------Then taken apart to manageable pieces in main salon.----Replacement short block was carried in or went in through a window and assembled on the floor.-----Lifted up.---Hatch removed.----Engine then lowered into position.---Mechanic said he does this all the time.
 
Well that sounds like good news to me. That mean I don't have to hire a crane or anything like that. So would I just close all the seacocks to keep the boat from flooding while I pull all the pumps hoses and engines?
