What is the steel rod that goes through holes on the motor bracket with a little flip lever that allows you to remove it or lock it in place?
 
That would be your manual trim. Motor lower unit too close to transom will cause bow to dig and too far bow will be too light. Somewhere between these points will be best operating for you depending on how boat is loaded.
