Temperature rating for 440 chrysler thermostat raw water cooled (fresh water)

My current thermostats are rated at 140 degrees. It seems that this is a low temperature for a gas engine. In your experience, what would be the best temperature? I have gotten advice from various mechanics, from; don't put in any thermostat, to 180 degrees.
 
thermostat is there for a reason, the 140 degrees is because the system is not pressurised like a car engine, stick with the OEM parts
