Good Crusing Speed with good oil pressure.

I have a 1974 Willard Trawler with a 50 HP Prrkins. I just had the fuel pumps rebuilt along with new wiring and countless other work. I brought her up from the Keys at about 2300 rpm but I don't recall the oil, I know it was at least 60 psi. I have read about everything I can about the correct range but most say 80% of this or 24% of that. Can someone just say, it would be goo to run between 1800 & 2300 with oil no hogher than 60psi. Also if my oil it to high, what's a good way to get it down some? Thanks
