Is 5 qts of oil enough for a 5.7 ?

I have a 1994 5.7GI. I did the begin of season oil change yesterday. While looking up how much oil to buy I looked in the Seloc manual (pg. 2-65) to see how much it takes. According to the Capacities chart it states that it takes only 5 quarts. Is that right? That seems a bit to little for me. The reason is that I have a truck with the same size engine that takes 7 quarts.

I also have a follow up question, how should I check the oil; when the boat is on the trailer or when its on the water?
 
5 qts is what it takes. Fill the oil, run the engine to finish filling the filter and check the level on the stick. On the trailer or in the water, it should be close.
