If it's a constant "beeeeeeeeeeeeeeeeeeeep" you probably have a fried temperature sensor.

A quick check to see it that's the culprit is:

remove the hood

standing behind the engine there is a temp sensor on the port head (left side if standing behind)

it can be identified by two wires (black) - one will be grounded to the block the other will go to a bullet style connector (then on to the alarm control)

disconnect that bullet connector

If the beep goes away, replace the sensor (25-50 bucks at a Merc dealer, depending on the exact sensor part number) OR just leave it disconnected and PRAY that you never really have an overheat which usually results in about $2.5K of damage....
