right operating temp

I am rebuilding a 1975 raw water cooled 350 chevy. before tear down it operated at 125 degrees I would like to know the right operating temp for this engine using a raw water cooling system. That seems cool to me. The blocks at the top of the manifold look like you can locate thermostats at different locations and possibly change that?
 
If the cooling system is performing, the temp gauge usually indicates what the t-stat is rated for. Some will show up to a 10 deg rise at WOT. Most raw water engines use a 143 deg, F thermostat. Some newer engines may run a little warmer.

I'd be more interested in what the existing thermostat was rated for (operating temp) and what was used to get the 125 deg temp.
