"Cooler is not necesarily better. If the engine coolant and oil does not get warm when the engine is run hard the oil will not vaporize off condensed water and other harmful dissolved gases.
Your engine should likely have a 160 or 170 degree T'stat, and that is about where the temp should run.
As stated above, an occasional rise up to 200 or so will not hurt it; but I would keep a close eye on the gauage for any deterioration that might indicate a worsening cooling condition.
Your risers should be warm to the touch, but not blistering hot. If they are really hot, you have insufficient cooling water flow.
