"After pulling the kids on tub

"After pulling the kids on tubes at relatively high RPMs for a few minutes, I get a continuous alarm which will usually stop if I put the engine in neutral or restart it. I just had the engine checked out before this past outing and the engine appears to be cooling ok...plenty of water flow. The impeller was changed out. Both oil tanks are at the proper levels and the engine runs strong. I've heard that the t-stat could be dirty and/or need replacing. Any other thoughts? They say that it's easy to change the t-stats. Where are they located?"
